Ingredients
- 2.5 Pounds, chicken thighs, bone-in
- 2 TBSP olive oil
- 2 TBSP lemon juice
- 1/2 tsp dijon mustard
- 2 cloves garlic, smashed
- 1 TBSP NiceSpice, Sweet & Sour
- 1 lemon, cut into 1/2 inch slices
- 2 TBSP chives, sliced thin (for garnish)
- 2 TBSP parsley, finely chopped (for garnish)
Preparation
Step 1
Preheat the oven to 400° F. Line a large baking sheet with foil and set aside.
Step 2
Whisk together the olive oil, lemon juice, dijon mustard, garlic and the sweet & sour NiceSpice in a bowl. Slice your lemon and set aside. Chop the chives and parsley and place them in a separate bowl mixed together.
Step 3
In a ziplock bag, drizzle the olive oil mixture over the chicken, rubbing to coat it well. Allow it to marinate for at least 15 minutes. The longer the better to get more flavor!
Step 4
Transfer the chicken onto the baking sheet with the skin side up and make sure to pour the remaining marinade evenly over the chicken- we don't want to lose all that goodness! Put your lemon slices on the baking sheet as well. (This will roast and provide extra flavor!)
Step 5
Bake in a preheated oven for 35-45 minutes, until the chicken has reached an internal temperature of 165° F and the chicken is golden brown in color on the top.
Step 6
Top with the chive and parsley garnish then dig in and enjoy!
